<p>Did you ever make a gingerbread house when you were a kid? I know a lot of us did, but ours were all pretty simple. It really doesn&#8217;t take much more effort or skill to make one that is fabulous, just a little know how. Here is a break down of how we made our gingerbred house and how to make reindeer, snowmen, and christmas trees.</p>
<p>Take a large metal cookie sheet and cover in tinfoil. Flip it over where the bottom is the top. Now make your hard icing (make it by taking 1 lb. powdered sugar 1 tsp. cream of tartar 3 egg whites). Pour over the tinfoil for snow effect, remember this will dry very hard. Now you can start on your house.</p>
<p>Build your house with Graham Crackers. After you have a shape to your house then you can add a front porch by using a long graham cracker and two small tiny ones, and a triangle cut piece. Ice those down. Use candy canes to hold the front porch up. Make sure you put a jelly lifesaver at the bottom to put your candy canes in. It will help hold the front porch up and keep it from sliding.</p>
<p>Now add your Frosted Mini Wheat&#8217;s and Red and Green Gum Drops to your roof. Use glue icing for all that.</p>
<p>Add Peppermints to your front porch and around the house close to it.. Set a gum drop on each peppermint candy on the ones on the ground around the house. Put four candy canes around the house. Add your firewood by using the long straight pretzel sticks in back next to your chimney that you need to make. Make that chimney out of graham crackers and and cover with white icing. Stick peanuts in the white icing spaced apart. They look so neat. You can do the side of the house with peanuts and icing to give it that rocked house look. To make your door just add two pink sugar wafers side by side standing straight up and glue them to it using frosting glue.</p>
<p>Add your pretzel fence around the whole house and string ribbon through it for a pretty effect. Sprinkle powdered sugar lightly across hard snow ground for snow look. Add your sidewalk by putting some m&#038;m&#8217;s in the icing. Your icing should still be soft enough to do this by the time you get the structure of the house up.</p>
<p>Snowman Directions:<br />

<ul>
<li>Big Snowman</li>
<li>2 Large Marshmallows (For Head and Body)</li>
<li>Icing or Toothpick (To hold body together)</li>
<li>Green Fruit Roll Up (Scarf)</li>
<li>1 Green Gum Drop (For Top Hat)</li>
<li>1 Peppermint Patty (For Top Hat)</li>
<li>1 Orange Gum Drop (Cut a tiny pointy piece for nose)</li>
<li>Black Tiny Sprinkles (For Eyes, Mouth and Buttons)</li>
</ul>
<p>Take your two large marshmallows and put a toothpick in the middle of them to hold them together. Tear a little piece of green fruit roll up off like a scarf and wrap it around snowman neck. Put a little piece of pointy orange gum drop nose on the snowman. Dot his eyes and buttons with black sprinkles. You can use the icing to stick this stuff on. Put his peppermint hat on and top it with a green gum drop. Remember to use your icing glue to help them stay on.</p>
<p>Little Snowman Directions:<br />

<ul>
<li>2 Small Marshmallows</li>
<li>1 Orange Gum Drop (For nose)</li>
<li>1 Orange Gum Drop (cut in half for hat)</li>
<li>Yellow Fruit Roll Up (For Scarf)</li>
<li>Black Sprinkles (for eyes, mouth and buttons)</li>
<li>Icing Glue</li>
</ul>
<p>Use icing to stick the 2 marshmallows together. Cut a tiny piece of oragne gum drop for nose stick it on. Use black sprinkles for eyes, buttons, and a mouth. You can give him a scarf by using a fruit roll up cut in a tiny piece.</p>
<p>Reindeer Directions:<br />

<ul>
<li>2 Brown Sugar Wafers (For body of reindeer)</li>
<li>3 Tiny Broken Pieces of Pretzels (For antlers and tail)</li>
<li>1 Tootsie Roll (For head)</li>
<li>White Frosting (for white of eyes)</li>
<li>Black sprinkle (For pupil of eye)</li>
<li>4 Toothpicks (for his legs)</li>
<li>2 Orange Circus Peanuts (cut in half for each foot)</li>
<li>Green Fruit Roll Up (Cut into thin piece for Scarf)</li>
<li>Red Candy (for nose- you can use m&#038;m, red hot, red jelly bean, or something else)</li>
</ul>
<p>Use icing to glue your two brown sugar wafers together. Add your 4 toothpicks into the sugar wafers. Cut 2 circus peanuts in half and stick one on each toothpick for his little feet. Take a tootsie roll and cut in half. Shape it into a long head and glue down with icing. Add green fruit roll up scarf. Add your pretzel antlers that are broken into tiny pieces. Add your pretzel tail. Add your white icing for white of eyes and then add black sprinkle for black pupil of eye. Put his candy nose on.</p>
<p>Ice Cream Cone Christmas Trees Directions:<br />

<li>Turn Cones upside down. Put some white icing on around the tree and add colorful sprinkles to it.</li>
</ul>

<li>Small Miniature Candy Canes (To go around the house, and hold front porch up)</li>

<li>Pretzels shaped like 8&#8242;s &#038; Long straight ones (For fence and tiny twig pieces for reindeer antler &#038; tail- long ones for firewood)</li>

<li>Coloring sprinkles (To decorate Christmas trees)</li>

<p>When it comes to natural hives remedies, you must first understand what causes hives to occur. Hives are caused when the chemical histamine is released when you come into contact with something you are allergic to.</p>
<p>There are several symptoms of hives that need to be mentioned as well. These include swelling and itchy pink lesions on your body, and difficulty in swallowing or breathing.  What can cause these hives to occur are hereditary factors, allergies, and exposure to extreme heat or cold.</p>
<p>Natural hives remedies include using herbal tea to treat them. You can drink passionflower, chamomile, or peppermint tea to de-stress and make your symptoms ease somewhat. Also, 1/2 cup cornstarch along with 1/2 cup baking soda added to a bathtub filled about halfway with warm water at least once a day will help with the itching. Aloe vera gel added to the area where the hives occur two times a day will also help your itching and make your skin heal better.</p>
<p>If you take cayenne pepper capsules, zinc, or vitamins C or E, this will also give you some relief. The main issue is to know what is causing the hives to occur so that you can eliminate this factor from your diet or environment. This makes it much easier to battle the hives.</p>
<p>Cool compresses may help provide pain and itch relief. Calamine lotion will help you ease the itching. Milk of magnesia is also an excellent help for itch relief since it is alkaline. Another not as well known remedy is acupressure. You can find the trapezius muscle between your neck and shoulder; putting pressure there should take care of the hives.</p>
<p>Other remedies include taking an antihistamine such as Benadryl to clear up the allergies. You can try a milk compress; the cool milk will feel good on your skin and you can try this for about 15 minutes each time. An oatmeal bath may help with the itching. Another remedy involves making a poultice of crushed leaves of chickweed.</p>
<p>Others have found that a paste of water and cream of tartar applied to the hives until it dries is helpful. Then you would make another paste and apply it.  If you brew the leaves and bark of red alder into a powerful tea, this is a good remedy for hives. Another is to use the leaves of black nightshade and apply to the skin.</p>
<p>There are many natural hives remedies. Just remember that if your symptoms get too extreme, or you have problems breathing, you should see a doctor immediately or even go to the emergency room of your hospital.</p>

<p><strong>Grandson&#8217;s Favorite Cake</strong><br />
<br />Before my oldest grandson was three, he decided the best cake in the world was carrot cake topped with cream cheese frosting. Each grandchild gets to choose what cake is baked or purchased for their birthdays. We all know when my grandson&#8217;s birthday comes along, the recipe below will be on the menu!</p>
<p>Carrot cake is not only delicious, it provides fiber and protein, as well as vegetables and fruit to picky eaters. Even children who do not like vegetables will eat this cake. I hope you enjoy this homemade cake as much as we all do.</p>
<p><strong>My Grandson&#8217;s Favorite Cake!</strong></p>
<p>2 cups sugar<br />
<br />1 &frac12; cups oil<br />
<br />3 eggs<br />
<br />2 tsp vanilla extract<br />
<br />2 cups flour<br />
<br />2 tsp soda<br />
<br />2 tsp cinnamon<br />
<br />1 tsp salt<br />
<br />2 cups grated carrots<br />
<br />1-8oz can crushed pineapple<br />
<br />2 cups chopped pecans<br />
<br />1 cup grated coconut, optional&#8211;I leave it out.</p>
<p>Combine sugar, oil, eggs, and vanilla in bowl; mix well. Stir in sifted dry ingredients. Add carrots, pineapple, pecans and coconut; mix well. Pour into prepared 8&#215;13 inch baking pan. Bake at 350 degrees for 45-50 minutes or until cake tests done. Use buttermilk frosting or a cream cheese frosting.</p>
<p><strong>The perfect cream cheese icing for your carrot cake!</strong></p>
<p>1 8oz package of cream cheese<br />
<br />&frac12; box powdered sugar<br />
<br />&frac12; stick margarine<br />
<br />2 tsp vanilla</p>
<p>Mix ingredients stir until smooth, and spread over cake while hot. Sprinkle pecans and or coconut on top of icing. If desired for carrot cake, purchase orange and green icing in a tube and decorate cake with icing carrots.</p>

<p>Here are two great banana cakes. Both are made from scratch. They are both very moist and delicious.</p>
<p><strong>Hummingbird Cake</strong></p>
<ul>
<li>3 cups flour</li>
<li>2 cups sugar</li>
<li>1 teaspoon salt</li>
<li>1 teaspoon soda</li>
<li>1 teaspoon cinnamon</li>
<li>3 eggs, beaten</li>
<li>1 1/2 cups vegetable oil</li>
<li>1 1/2 teaspoon vanilla</li>
<li>1 8 oz. can crushed pineapple</li>
<li>2 cups chopped nuts</li>
<li>2 cups chopped ripe bananas</li>
</ul>
<p>Put the dry ingredients in a large mixing bowl. Add eggs, oil and stir until moist. Do not beat. Add vanilla, pineapple, nuts and bananas. Pour into 4 well greased 9 inch pans. Bake 25 &#8211; 30 minutes at 350 degrees. Frost this cake with cream cheese frosting. The recipe is below.</p>
<p><strong>Cream Cheese Frosting</strong></p>
<ul>
<li>1 8 oz. package cream cheese</li>
<li>1 stick butter or margarine</li>
<li>1 teaspoon vanilla</li>
<li>1 box powdered sugar</li>
</ul>
<p>Mix cream cheese, butter and vanilla together until creamy. Gradually add powdered sugar. Frost and serve.</p>
<p><em>This is a very popular cake at my office.</em></p>
<p>Next is a big family favorite.</p>
<p><strong>Tropical Banana Cake</strong></p>
<ul>
<li>2 1/2 cup sifted cake flour</li>
<li>1 2/3 cups sugar</li>
<li>1 1/4 teaspoon baking powder</li>
<li>1 teaspoon soda</li>
<li>1 teaspoon salt</li>
<li>2/3 cup shortening</li>
<li>1 1/4 cup mashed bananas</li>
<li>2 large eggs</li>
<li>2/3 cup buttermilk</li>
<li>1 teaspoon vanilla</li>
</ul>
<p>Sift together into a large bowl flour, sugar, baking powder, soda and salt. Add shortening, bananas and 1/3 cup buttermilk. Stir to dampen flour. Beat with electric mixer 2 minutes. Add remaining buttermilk, eggs and vanilla. Beat 2 minutes. Pour into 2 paper-lined 9-inch pans. Bake 30 to 35 minutes in a 350 degree oven. Now while our cake is cooling, we move on to the frosting.</p>
<p><strong>Lemon-Banana Frosting</strong></p>
<ul>
<li>2/3 cup butter or margarine</li>
<li>4 cups powdered sugar</li>
<li>6 tablespoon mashed banana</li>
<li>2 tablespoon lemon juice</li>
</ul>
<p>Cream butter and sugar. Add banana and lemon juice. Blend until smooth and frost your cake. Do not serve this cake right after you have finished frosting. It will be too sweet. This cake needs to be refrigerated for at least 24 hours before serving. Then, it is fabulous and ready for company!</p>

<p>As a cake decorator who sells their cakes or a home baker who prepares desserts for friends and family, it is important to know all of the facts about fillings, which ones need to be refrigerated and which can be left out at room temperature. Your reputation can depend on it, and you certainly do not want to make anyone sick.</p>
<p>We know that butter cream frosting does not hold up well in the heat. Think about a fondant covered cake with a filling. Do you think it&#8217;s safe to be out in the heat? Maybe not. Chocolate ganache filling melts if left in the heat for a period of time. Did you know that? It&#8217;s deceiving. It sets firmly so you can use it as a filling in sculpted cakes and are able to shape it into truffles that are delicious to eat but when a ganache filled cake sits out in the heat, the ganache gets soft and starts to disintegrate which, if it is a stacked cake, could come tumbling down.</p>
<p>Do some advance planning. Make sure that your clients or hosts are educated about the types of fillings that would be best suited for their events.</p>
<p>Fillings can be made from scratch or bought. The fillings made from scratch are highly perishable and should remain refrigerated. New filling recipes should not be tried the night before an event. If you have to do something new, test the recipe out two weeks before. That way, if you need to make changes, you have time to do it or get help.</p>
<p>Fillings that come in sleeves at your local cake store can be used right out of the sleeve as they are and the remainder can be refrigerated up to 6 months.</p>
<p>If you decide to use fresh fruit in your filling, please make sure to use the freshest fruit you can find and prepare it as close to serving time as possible. If you must put the cake together the night before (for example, strawberry cake with fresh strawberries in the middle, cut the fruit in half. Smaller pieces will get mushy overnight and not make a good presentation.</p>
<p>Not sure how to properly whip the cream for your filling, use the aerosol can version, sprinkle with confectioner&#8217;s sugar and add your fresh fruit and cover with more canned whip cream and more confectioner&#8217;s sugar.</p>
<p>If your cake has a fresh fruit filling and the cake is covered in fondant, stack the cakes at your venue. The fondant will get gummy if you stack them sooner.</p>
<p>Refrigerated Fillings</p>
<p>If your event is held indoors whether it is a big hall or someone&#8217;s home, feel free to use a filling that has to be refrigerated. Cream cheese, custards, pastry cream, whipped cream, puddings, and any mousse type fillings that include fresh fruit are perfect for these venues. Cakes can remain refrigerated until right before serving. Let people know when they request these fillings that there needs to be space in the refrigerator to store the cake until serving. A lot of people fill the refrigerators with everything else and then have to scramble to find room for the cake. It cannot sit out for a long period of time or there will be a disaster.</p>
<p>Speaking of disaster, please do not mix up a batch of the pudding mix as it is instructed on the box and use that as a filling for your cakes. Unless it&#8217;s made like a mousse, it will not hold up to the weight of the cake on top and will ooze out and make a mess.</p>
<p>When in doubt, make a test cake to see what happens when you refrigerate your cake with the intended filling and frosting/fondant. You don&#8217;t want to be surprised about this.</p>
<p>Refrigerated fillings are delicious, though sometime they are a double-edged sword. Butter cakes do not taste their best right out of the refrigerator. Combine them with a refrigerated filling, and you have to make a choice. Cold cake or warm filling. Either one is not good. And, you don&#8217;t want people telling the host/hostess that the cake was &#8220;dry&#8221; because it was cold. Switch to a different cake recipe or use sugar syrup on your cake layers before assembling to help the cake retain moisture so it doesn&#8217;t dry out while in the refrigerator.</p>
<p>Remember that gum paste and royal icing decorations on a cake will be ruined if it is refrigerated.</p>
<p>Non-Refrigerated Fillings</p>
<p>Any of the sleeves of fillings bought at your local cake decorating store should be fine at room temperature. So are the jellies, preservatives and ganache. Whenever using the fillings in the sleeves, remember the dam of frosting around the edge of the cake. You don&#8217;t want it oozing out once the cake settles. Trust me on this one. That is why it&#8217;s best to use the following technique for fillings.</p>
<p>Make sure that you have a thick dam of frosting going around the edge of the cake. Add no higher than a 1/4&#8243; high layer of filling. For example, whenever I use lemon filling, I split the cake layer in half, add the dam of frosting, spread the lemon filling and then put the two layers together. Frosting goes between the cake layers so it will be:</p>
<p>Thin layer of frosting that covers entire cake:<br />

<br />Frosting dam &#8211; Lemon filling<br />
<br />Lemon cake<br />
<br />Middle frosting layer<br />
<br />Lemon cake<br />
<br />Frosting dam &#8211; Lemon filling<br />
<br />Lemon cake<br />
<br />Cake Board</p>
<p>Always refrigerate to let the frosting set. Once it&#8217;s set, cover the cake in fondant. Set your cake in a cake box that has room for it to fit without the fondant touching the top or sides of the box. Refrigerate again to set. This is your insurance policy when you deliver the cake. If the party is at your house, and it&#8217;s cool inside, you can leave it out. Refrigerating this kind of cake makes it easier to slice so that the filling doesn&#8217;t ooze out of every slice. You want a nice presentation.</p>
<p>When you cake is removed from the refrigerator, please remember to give it time to &#8220;sweat.&#8221; Don&#8217;t touch it during this period or you will leave a mark. Let the cake come to room temperature. Usually, by the time you travel to your destination, and it&#8217;s time to serve the cake, the fondant will be okay to slice and the dewy, shiny look will be gone.</p>
<p>What Kind of Filling is It?</p>
<p>Lemon, chocolate, caramel, banana, apricot, chocolate chip, and some other fillings are easily recognized in a cake just by looking at them. Don&#8217;t make your guests guess what they&#8217;re eating. Make tent cards for each table that includes this information or add it to the menu card. With so many food allergies out there, you don&#8217;t want to be remembered for making someone sick.</p>
<p>To Freeze or Not to Freeze</p>
<p>Never freeze a cake filled with a custard filling because it will separate. Whipped cream cakes have been frozen. It depends on the type of whipping cream used. Check the container to see if it tells you that it can be frozen because you do not want your cake to weep. Rose Berenbaum, in her book, The Cake Bible, shows you how to stabilize the whipping cream with gelatin.</p>
<p>Enjoy using your cake fillings to take your cakes to higher levels. Just be safe.</p>

<p>Thanksgiving is the best time of the year to roll out the pies. A few years back, I used to make about 6 pies, my neighbor&#8217;s husband was in Iraq, and I felt bad that she had to spend Thanksgiving without her sweetheart, so I had my husband truck over an apple pie. My other neighbors used to give me Gilfeather turnips and I returned the favor with a pie, and still another couple who were on a fixed budget, I sent a pie. There is something so cathartic about giving.</p>
<p>Pies differ from area to area, I don&#8217;t go to Oklahoma for a authentic Key Lime Pie, or to California for a Michigan Cherry Pie. My parents live in Maine and that is the farthest north you can get on the east coast. Maine is synonymous with blueberries. When I go to Maine, I want blueberry pie packed thick with tart Wild Maine blueberries, and for unexplained reasons the crunchy breakfast cereal Grape-Nuts has made it&#8217;s way into pie from Presque Isle to Kennebunkport. Traveling south the Apple pie begins to make its debut. Vermont, New Hampshire and New York are prime growing areas for apples. Apple pie can be double crusted or Crumb, which is my favorite.</p>
<p>As we travel into Amish/ Pennsylvania Dutch country the Shoo-Fly pie is common. It is a mixture of molasses, brown sugar, cinnamon, flour and butter, some pies are considered wet-bottomed meaning there is a sweet filling and then a crumb topping, or dry-bottom the crumb topping is folded into the filling. The unique thing about this pie is that all ingredients can keep without refrigeration. The name came about by the bakers having to shoo the flies away, because the flies were attracted to the sugar.</p>
<p>As we cross the Mississippi River, heading south into Virginia, pie makers compete for the best Sweet potato pie, yams or sweet potatoes were cultivated in the area since the 1600&#8242;s. The sweet potato is treated much in the same fashion as the pumpkin pie resulting in a silky spicy custard. Moving a little west we enter the Volunteer state where soul food like egg custard pies and buttermilk pies are popular, motoring into the Music City, Nashville has taken the custard pie a step further by adding sweet toasted coconut. The difference is they make a rich pastry cream on the stove, instead of baking the custard in the oven. Folding it with copious amounts of coconut and decadent whipped cream.</p>
<p>Georgia is known for their peaches, and what better way to celebrate Georgia than having a piece of peach pie, what is also surprising is that Georgia is one of the top manufacturers of pecans and pecan pie. The pride of Atlanta, Georgia is Lemon icebox pie, which is the northern cousin of Key lime Pie from Key West, Florida. It is made with lemon juice, eggs and condensed milk. We round out our Eastern seaboard pie quest with, of course Key Lime Pie. The key lime arrived in the Keys with the Spanish in the 1500&#8242;s, and was described as a confused lemon. Having features of both the lemon and the lime. Surprisingly hurricanes wiped out all traces of the actual key lime. You now, must know someone who knows someone to get an authentic key lime.</p>
<p>In the Midwest, the area still has shadows of their resourcefulness. Settlers developed the land with fruit trees and Yankee ingredients were in short supply. In Michigan they have tart Michigan cherries, made into delicious to die for cherry pies. Pies used less flour than bread and cakes, and could be cooked in fireplaces. Hoosier pie or Indian sugar cream pie was a very simple dessert consisting only of cream sugar and flour. Persimmons and paw paws are made into pies in the Midwest. Persimmons are an unusual fruit in that they ripen towards the end of the fall, and have a pumpkin apricot flavor, is cooked in the same way as a pumpkin. Paw Paws were important to the native Indians and take experience to work with them. They are cross between banana, pineapple and mango and are used in custards. Honorable mention is the Bean pie created in Chicago, made with navy beans.</p>
<p>Pies that have no home or an area to call their own, are pies that are made all over the United States and each state can trace the history of such a pie. Pumpkin pie it is said to have been created near Plymouth plantation, however the pie has made its rounds all over the U.S. Lemon Meringue pie, is said to have originated in the South, however lemons are known to grow out west. Pecans lay claim to Georgia, but Texas might dispute that. Washington might be a little upset about the origin of the Cherry Pie, but I am sure Michigan will debate it. The grand daddy of the pie debate hands down has to be the Apple pie. Apples grow all over the United States, and every pie aficionado from California to Maine claim the best apple pie. It is up for debate! The important thing is that Pie was created. The pie that I am going to share is a blend of pies that I have created in my life. I love pie crust, however I love the cookie crumb crust better.</p>
<p>Chunky Monkey Pie</p>
<p>1 Keebler Ready Crust Chocolate Pie Crust<br />
<br />8 ozs melted semi-sweet chocolate<br />
<br />2 teaspoons Crisco<br />
<br />3 large ripe bananas<br />
<br />12 ozs softened cream cheese<br />
<br />4 ozs toasted chopped walnuts<br />
<br />1 1/2 cups sifted powdered sugar<br />
<br />2 tsps vanilla extract<br />
<br />1 tsp banana extract<br />
<br />1/2 cup marshmallow cream<br />
<br />1 tablespoon dark rum<br />
<br />2 banana cut in half lengthwise and sliced<br />
<br />1 tablespoon banana liqueur<br />
<br />1/4 tsp ground cinnamon<br />
<br />1/2 cup brown sugar<br />
<br />1 oz of butter</p>
<p>In a sauce pan combine the butter, brown sugar and cinnamon and cook until the sugar dissolves, stir in the banana liqueur, add the banana and cook until the banana softens and browns slightly, carefully add the rum, and tip the saucepan until the rum ignites. When the flames die down, remove the bananas and cool completely. Take your ready made crust and melt only 6 ozs of the 8 ozs of semi-sweet chocolate and spread over the ready made shell and cool. Take your remaining banana, slice and layer over the chocolate painted shell. In a mixing bowl combine the cream cheese and marshmallow cream mix on high until fluffy. Add the sifted powdered sugar, vanilla and banana extract and mix well. Fold in the whipped heavy cream and completely cooled banana mixture. Spoon into the chocolate pie shell. Melt the remaining 2 ozs of semi-sweet chocolate with the 2 tsps of Crisco in the microwave at 10 second intervals until mixable. Garnish the pie with the melted chocolate and refrigerate. Cut and enjoy.</p>
